Method

1. Preheat your pizza oven
Preheat your pizza oven to 200–250°C. Place a cast iron skillet inside the oven and allow it to heat for 3–5 minutes until piping hot.

2. Prepare the pigs in blankets
Wrap each mini sausage with a strip of bacon, making sure the seam of the bacon sits underneath so it seals as it cooks.

3. Create the garlic herb butter
Carefully remove the hot skillet from the oven.
Add butter, crushed garlic, rosemary and thyme to the pan. Allow everything to melt together, creating a fragrant garlic herb butter.

4. Add the sausages
Place the wrapped sausages into the skillet, turning them so they’re fully coated in the butter. Return the skillet to the oven.

5. Cook until crisp
Cook for 6–10 minutes, turning halfway through.
The bacon should be crisp and golden, with the sausages juicy and cooked through.

6. Finish and serve
In the final minute of cooking, drizzle honey over the top for a sticky, caramelised finish.
Remove from the oven and sprinkle with chopped parsley. Serve immediately.
