1. Preheat your pizza oven
Heat your Gino pizza oven to around 250°C.
Place a large muffin tin into the oven with 1 tablespoon of goose fat in each hole. Allow the fat to heat until smoking hot, this is essential for a good rise.
2. Prepare the batter
In a mixing bowl, whisk together:
- Eggs
- Flour
- Milk
- A pinch of salt
Whisk until smooth and lump-free. Let the batter rest for 10–15 minutes to improve texture.
3. Fill the tin
Carefully remove the hot muffin tin from the oven using heatproof gloves.
Quickly pour the batter into each hole, filling just under halfway.
Return the tin to the oven immediately to keep the fat hot.
4. Bake
Cook in the pizza oven for 12–15 minutes, keeping the oven door closed as much as possible.
Avoid opening the oven too often, as this can cause the Yorkshire puddings to deflate.
5. Serve
The Yorkshire puddings should be tall, golden and crisp with soft centres.
Finish with finely chopped rosemary and serve generously with hot gravy, a true Christmas classic cooked in the pizza oven.
