Day 6 - Ginger & Orange Glazed Carrots

Method

1. Preheat your pizza oven
Heat your pizza oven to around 250°C, allowing it to fully come up to temperature.

2. Prepare the glaze
In a bowl, combine:

- Juice and zest of 1 orange

- 1 tbsp brown sugar

- 2 tbsp olive oil

- Freshly grated ginger

- Salt and pepper

Whisk until smooth and set aside.

3. Start cooking the carrots
Toss the carrots with a drizzle of olive oil, salt and pepper.
Add them to a skillet and place into the pizza oven.
Cook for 8–10 minutes, stirring once, until they begin to soften.

4. Glaze and caramelise
Carefully remove the skillet and pour the ginger and orange glaze over the carrots.
Stir well to coat evenly, then return the skillet to the oven.
Cook for a further 5–7 minutes, stirring halfway, until the glaze bubbles, thickens and caramelises around the carrots.

5. Finish and serve
Remove from the oven and finish with a sprinkle of fresh thyme or parsley.
Serve hot as a vibrant, flavour-packed side alongside your Christmas roast, turkey, ham or festive pizza night.
