Golden, sticky and full of festive flavour, these honey-glazed parsnips are the perfect Christmas side. Quick to cook in your pizza oven, they free up space while still delivering that comforting roast finish.

Day 3 - Roast Honey-Glazed Parsnips

Ingredients

  • Parsnips
  • Olive Oil
  • Honey
  • Melted Butter
  • Thyme
  • Salt
  • Pepper

Method

1. Prepare the parsnips
Wash and peel the parsnips, then slice them into long batons of even size so they cook evenly.

2. Make the glaze
In a small bowl, mix together:

  • A generous drizzle of Levante Olive Oil

  • Honey

  • Melted butter

  • Fresh thyme

  • A good pinch of salt and black pepper

Stir well until combined.

3. Coat the parsnips
Add the parsnips to the bowl and toss thoroughly, making sure every piece is well coated in the glaze.

4. Heat the oven
Preheat your pizza oven to around 200–250°C.

5. Roast
Place the glazed parsnips into a roasting tray and slide it into the oven.
Cook for 8–12 minutes, tossing halfway through.

The parsnips should blister, caramelise and turn deep golden around the edges.

6. Finish and serve
Remove from the oven, sprinkle with extra fresh thyme and serve immediately.
