1. Preheat your pizza oven
Heat your Gino pizza oven to around 200°C.
Place a cast iron skillet inside to warm up, you want it hot before the sprouts hit the pan.
2. Prepare the sprouts
Trim the ends of the Brussels sprouts and remove any tough outer leaves.
Set aside while the skillet continues to heat.
3. Crisp the bacon
Carefully remove the hot skillet from the oven.
Add the olive oil and bacon, it should sizzle immediately.
Return the skillet to the oven and cook for 3–4 minutes until the pancetta begins to crisp and release its fat.
4. Add the sprouts
Remove the skillet again and add:
- Brussels sprouts
- Butter
- Garlic Salt and pepper
Stir well so the sprouts are coated in the pancetta fat and butter.
5. Roast and caramelise
Return the skillet to the pizza oven.
Cook for 6–8 minutes, stirring halfway through.
The sprouts should char around the edges while staying tender in the centre.
6. Finish and serve
Once crispy and caramelised, remove from the oven and finish with finely grated lemon zest.
Serve hot as a festive side dish, perfect alongside roast meats or Christmas sharing plates.
