1. Preheat your pizza oven
Heat your Gino pizza oven to 250°C.
You want strong, even heat, the high temperature helps the pastry puff beautifully and turn crisp and golden.
2. Prepare the filling
Remove the festive sausage meat from its skins and place it into a bowl.
Mix gently to loosen, ready for rolling.
3. Assemble the sausage rolls
Roll out the puff pastry on a clean surface and cut it into a large rectangle.
Place the sausage meat in a neat log along one long edge of the pastry.
Brush the opposite edge with beaten egg, then roll the pastry tightly around the filling to seal, ensuring the seam sits underneath.
Cut into mini sausage rolls and brush generously with Levante Extra Virgin Olive Oil with Chilli.
4. Bake
Place the sausage rolls onto a lined tray and slide into the pizza oven.
Bake for 10–12 minutes, until:
- The pastry is deeply golden
- The layers are visibly puffed and flaky
- The sausage juices are sizzling and caramelising
Turn the tray if needed for even colour.
5. Rest and serve
Allow the sausage rolls to cool for 5 minutes so the pastry sets.
Serve warm with cranberry sauce, mustard or apple chutney, a festive classic, cooked perfectly in the pizza oven.
